Artificial intelligence has been utilized by Prof Kevin Verstrepen at KU Leuven University in Belgium for the past five years to revolutionize the beer-brewing process. By analyzing the chemical compositions of 250 different beers across various types, such as blondes and lagers, the research team aimed to predict and enhance drinkers’ preferences.
Through a meticulous process, the team identified 226 chemical properties of each beer, including sugar concentration and acetic acid, which were then linked to 50 sensory profile qualities like citrus, bitterness, and floral notes. By comparing these properties with the feedback from 16 beer connoisseurs and 180,000 RateBeer reviews, the researchers were able to create the perfect pint that resonated with drinkers.
In a blind test, panelists evaluated the 250 beers based on aroma and flavor, scoring each on the 50 sensory profile qualities. The unanimous approval indicated that the AI-generated beers were indeed superior in taste. However, Prof Verstrepen clarified that this AI advancement would not replace brewers but rather complement their expertise by identifying key ingredients and chemical interactions to brew exceptional beers.
